Country Culinaire, a boutique dessert company from the Hawke’s Bay, is a prime example of how to create a successful business out of a hobby.
Country Culinaire’s products were originally made on a farm by owner Trish Gibson, for the local farmers’ market. Handmade Pavlova Roulades, Christmas and Sticky Date Puddings quickly became popular, forcing Trish to purchase a bigger factory to keep up with demand.
Word of these gourmet desserts spread to Australia, with Country Culinaire exporting to Melbourne for the first time in July this year.
“It has been an exciting year of growth for our business”, says owner, Trish Gibson.
“We are now exporting to the Australian market, as well as being available all over New Zealand too. Even with this expansion, we still use only the freshest of ingredients, we don’t use preservatives, and our products are consistently sought after. We still hold the same philosophy and hand make all of Country Culinaire’s delights as when we were in our small registered kitchen on the farm and selling at the local farmers’ market.”
Another exciting development in Country Culinaire’s progress is that it is now producing ice cream. Using old-fashioned techniques for a perfectly creamy blended texture, the ice cream comes in eight unusual, exotic flavours such as Orange and Cointreau, Liquorice and Black, and Chocolate and Chilli.
These are about to be released into stores, in convenient, yet unique 650mL roll tubes that allow you to slice the ice cream into perfect rounds. As well as the flavours available in store, Country Culinaire is tailor-making ice cream flavours and sorbets for restaurant menus around the country.

Our favourite Grandmother and doyenne of luxury desserts has launched the ultimate traditional, luxury Christmas Pudding.
Christmas pudding is part of the festive season that many of us can’t do without. If you don't have the time or patience to make a homemade Christmas pudding, a traditional Country Culinaire Christmas Pudding is a delicious option. It comes frozen, festively packaged and tastes as home-made as it looks - beautifully moist, with luscious, plump rich fruit. It has delicious aromas of fragrant spice, and a sweetness which is balanced by a touch of alcohol. Each mouthful is oozing with decadence - you won’t believe it until you try it.
Two or four individually wrapped, 135gm puddings are accompanied with a yummy brandy sauce (in a convenient sachet) and boxed in an attractive Country Culinaire carton. two major categories. The biannual Awards, announced on Monday 16 November, showcase
the best in New Zealand food product innovation and creativity.
For the second consecutive awards, Country Culinaire has
won the Gourmet Foods Award and the Packaging Design Award. First time round, Country
Culinaire Pavlova Roulades scooped the Awards and this week, it was the turn of
Country Culinaire Sticky Date Pudding.
The Gourmet Foods Award recognises excellence in the production
of specialised food products designed for the exclusive, indulgent and high added-value
segment of the retail food market. The judges remarked that they “were highly impressed
with the excellent flavour palate as well as the ability of the product to retain
its highly edible quality after having been twice baked”.
The Packaging Design Award focuses on the packaging graphics
and design, especially the packaging format and it’s special characteristics.
The judges commented that the “individually wrapped components with a clear and simple ingredients list and cooking instructions,
made this product a standout entry in the Awards. It oozed style and sophistication
…”.
